Mixed nut and fruit toasted muesli![]() This recipe makes around 2 kg so depending on how many gifts you make you may be lucky enough to have some left over for yourself. Served with fruit salad and your favorite yoghurt you're guaranteed a good start to the day. Alternatively, just halve the recipe for a smaller quantity. Buy nuts that are already toasted to save time. You can use whatever nuts you like. 1 kg quick oats 180g long thread coconut 180g sesame seeds 125g macadamia nuts, chopped 100g almonds, sliced 150g baking bran 100g wheat germ 200ml liquid honey 200ml rice bran oil 250g currants 200g dried apricots, roughly chopped Preheat oven to 160 degrees Celsius. In a large bowl mix the oats, coconut, sesame seeds, bran, wheat germ and nuts. In another bowl combine the honey and oil. Pour over the dry ingredients and stir until coated. Spread the mixture onto a large oven roasting tray and place in the oven. Every 10 minutes or so check the muesli and give it a stir to toast evenly. Continue until all the muesli is toasted and golden brown. This could take up to 40 minutes. Remove from the oven and once it has cooled a little, add the dried fruit. Stir together well and break up any clusters before storing in an air- tight container. Browse more recipes. |
