Fruity Chicken with ApricotsFruity Chicken with ApricotsSweet and savoury all in one!Babies like the combination of chicken and fruit. Dried apricots are one of nature's great health foods. They are a good source of betacarotene, iron and potassium and the drying process increases their concentration. They also make great finger foods. This is good by itself or you can mix it with 4 tablespoons of cooked rice or pasta. Suitable for the second stage of weaning - roughly 7-9 months Makes 3 portions Ingredients: 2 teaspoons olive oil 1/2 small onion, chopped (approx 50g) 1 small clove of garlic, crushed 75g chicken breast, cut into pieces 3 dried apricots, chopped 150mls passata (sieved tomatoes) 150ml chicken stock if home made (if not it is not suitable for children under 1 year old) so just use water Method:
