Light 'n' Tasty Weet-Bix Muffins

Light and Tasty Weetbix Muffins

With a good serving of fibre these muffins are filling and not to mention super tasty.  Make in large batches and freeze making them an easy lunch box option!

Serves: 12
Time to make: 20 minutes


         1 1/2 cups wholemeal flour
         4 Weet-Bix, crushed
         1/2 cup Light 'n' Tasty cereal
         1/2 cup sultanas
         1/2 cup milk
         1/2 cup natural apple juice
         150g tub low-fat yoghurt
         1 egg
         1 ripe banana, mashed
         2 teaspoons cinnamon
         1 teaspoon mixed spice
         1 1/2 teaspoons baking powder

 What to do:

  • Step 1 - Preheat the oven to 180°C.
  • Step 2 - Mix the flour, crushed Weet-Bix, Light ‘n’ Tasty, sultanas, spices and baking powder together in a bowl.
  • Step 3 - In a separate bowl, mix the milk, apple juice, mashed banana, beaten egg and yoghurt.
  • Step 4 - Combine the wet and dry ingredients together until they are just mixed and no more. Place in greased muffin tins and bake for approximately 15 minutes.
