I love banana muffins as they always tend to be moist and I feel as though I am at least getting some fruit intake! I also like the fact that these muffins use oil rather than butter - a good dose of monounsaturated fat (heart healthy fats).  I can't remember where I got this recipe from but it has been one that has been part of my favourites section of my recipe book for so long now that it has many stains and holes it is hard to read in places.  It is a true testament to how yummy they are!

Ingredients:


2 1/2 cups self raising flour
1/2 cup firmly packed brown sugar
1/2 cup dark chocolate chips (any type of chocolate works though - milk or white too)
1 1/2 cups mashed banana (3 large, very ripe bananas)
2/3 cup buttermilk (can substitute for yoghurt)
2 eggs
1 t vanilla essence
1/2 cup olive oil

Method:

  1. Preheat oven to 200 degrees celcius or 180 degrees for a fan bake
  2. Grease a 12 hole muffin tin (or mix it up and use mini muffin cases too)
  3. Sift flour & sugar into a large bowl
  4. Stir in chocolate chips and banana
  5. Combine buttermilk, eggs, vanilla essence and oil
  6. Add liquid ingredients into dry and mix to combine (don't over stir)
  7. Divide mixture between muffin tins
  8. Bake for roughly 20 minutes
