Nuts and seeds add a different texture in baking.  This slice keeps well and provides 2g of fibre per serve!!!  You can use any type of nuts as lots of kids are not huge fans of walnuts!  I've used almonds and it works well.

Makes 15 serves.

¾ cup dried prunes
1 t baking soda
¾ cup boiling water
1 cup plain flour
1 T baking powder
1 cup wholemeal flower
¼ cup lightly packed brown sugar
¼ cup castor sugar
1/3 cup chopped walnuts or any other type of nut
2 medium whole eggs
½ cup low fat milk
2 (250g) bananas
2 T vegetable oil
  1. Preheat the oven to 180 degrees.  Line a loaf tin with baking paper
  2. Chop the prunes into small pieces and place in a bowl. Sprinkle over the baking soda and water and leave for 10 minutes.
  3. Sift the plain flour and baking powder.  Add the wholemeal flour, brown sugar, castor sugar and nuts.
  4. Beat the eggs with the milk.
  5. Mash the bananas and add the oil.
  6. Combine all the ingredients together gently. Do not overmix.
  7. Place in the loaf tin and bake for 45 – 50 minutes or until cooked.  Leave in the tin for 5 minutes then place on a cooling rack to cool.
  8. Best eaten fresh (1-2 days) or frozen and then reheated in the microwave.
